Time for another Scrumptious Sunday! This recipe is from Joshua H., a friend of mine, whom I have actually never met in person! Yep, he’s a Facebook friend, as well as a fellow runner, and one that I look up to A LOT. Joshua is incredibly funny and kind. He’s also lost 180 pounds. I’m not kidding. And he eats stuff like Rice Krispy Treats. Can you believe that?! Joshua also has a goal to run 180 races, hence the name of his blog, Running180. He has learned how to enjoy life through fitness and also with the occasional Rice Krispy  Treat. I’ve seen him post several recipes, and asked if he’d share one with us for Scrumptious Sunday. This past year I’ve made it kind of a goal to make more rice krispy treats (aka RKs) throughout the year. I know that’s a strange and vague resolution to make, especially being a runner and former-400lbs. man. But, like most things in life, moderation is the key to overall health … and that includes treats.

Plus, I don’t make a pan of RKs and eat the whole pan myself (though I wouldn’t have put that past myself five years ago), I have to share it. And, I usually share them with my running friends during or after one of our long runs or races. You know, the distances you’d run and not think twice about eating a RK square … or two.

I also love the creativity of making a unique RK. Sure, I’m in the business of making a good original RK, but why not elevate that with ingredients that make it even better? This past year I’ve made Peppermint Brownie RKs, Lemon Sugar Cookie RKs, Pina Colada RKs, Glazed Donut RKs and my personal favorite … Caramel Snickers & Pretzels RKs. I wish that I wrote down all of the recipes, but sometimes in the heat of cooking you just improvise.

Then there are times when you tell yourself … “oh, I’ve got to write this down!”

I had one of those times a couple weeks ago. My c’niece (cousin + niece … we’re as close as Uncle/Niece) was getting baptized and asked me to make Rice Krispy Treats for the get together after the service. But, not just any kind of RK, only one that an eight year old girl could come up with … a PINK OREO RK.

Now, I could have two routes here. I could have just crushed up some Oreos, put some food coloring in the marshmallows and then thrown in the rice krispies. Or, I could make it unique and elevate it to something else.

Well, of course I took the latter road.

Oreo segration. Great object lessons for the children.

I knew that I wanted to deconstruct the Oreo and not just crush it into pieces. Since I was making enough for 50 people I got a Costco box of Oreos with 10 sleeves of Oreos and separated the cookie from the filling. I did all ten sleeves mainly because I wanted all of that frosting. The idea was to lay the frosting in between two layers of Rice Krispy Treat batter that consisted of some of the crushed Oreo cookie.

The slowest part of this whole recipe was separating the two components in separate bowls. If I were you, I’d make this a family thing and get kids involved in doing the dirty work. You could even give them a lesson in segregation by teaching them that people weren’t equal when separated like the Oreo … because everyone knows that an Oreo is best eaten together, not separate. Of course this could bring up the topic of cannibalism, so tread lightly.

I digress, slightly. Okay, more than that.

The RKs just staring at you in the face. Just. Right. There. In your face.

After separating the Oreos than I followed the recipe below. The reasoning behind the ratios of Oreos and cereal has more to do with experience. I’ve learned that there’s a fine line between how much dry ingredients you can mix with melted gooey and delicious marshmallows. It’s all science.

In addition the recipe is for a half sheet cake pan (12x18x2). So it makes a lot … about 40-50 servings. It’s ideal for parties and in this case, baptisms. But, I always make my RKs in the half sheet cake pan and have no problems sharing it with others. But, you can always cut the recipe in half if you want.

Anyways, here’s the recipe with some notes below.

Sofia’s Pink Oreo Rice Krispy Treats

Ingredients

  • 1 stick of butter (x2)
  • 5 cups, Rice Krispy Treat cereal (x2)
  • 4 cups, Mini marshmallows (x2)
  • 3/4 cup, dry yellow cake mix (x2)
  • 3-4 tbsp., Vanilla extract (x2)
  • 2 cups, crushed Oreos cookies (separated from the filling) (x2)
  • Oreo filling from 10 sleeves of Oreo cookies
  • 4-6 tbsp., Milk
  • Red food coloring for pink tint (or any color you want … or no coloring if you’re a fun hater)
