Scrumptious Sunday: Oven-Baked Ranch Fried Chicken

Hi friends! I’m Jen from My Daylights and I’m excited to share a family favorite recipe with you today for Scrumptious Sunday. At My Daylights, I share little pieces of my life-favorite recipes, DIY, crafts, and even some inspirational stories. One of my favorite things to share are printables and I’m constantly adding new ones.

When it comes to cooking, I’m all about easy. Like so many of you, I don’t have a lot of time and I’m always looking for recipes that come together quickly and can just be thrown in the oven. This Oven-Baked Ranch Fried Chicken is one of those recipes!

I love the taste of fried chicken but it’s too messy and takes more time than I like. Plus, it’s not exactly healthy. While this isn’t without all of the fat, it’s not greasy and tastes amazing.

Oven-Baked Ranch Fried Chicken

4-6 Chicken Breasts

2/3 cup Bisquick mix

1/3 cup Ranch dressing mix (think this ends up being 2 packets of ranch)

3 eggs, slightly beaten

4 Tbsp butter, cut in pieces

Instructions:

Preheat oven to 350 degrees. Place chicken in plastic bags and pound until flattened. Spray 9×13 pan with cooking spray. Beat eggs. Mix Bisquick and ranch dressing together in separate bowl. Salt and pepper chicken. Dip each chicken breast in the egg mixture. Next, coat chicken in ranch/Bisquick mix and coat thoroughly. Place in 9×13 pan. When all chicken is coated and in pan, cut up butter in pieces and place on top of the chicken breasts. Bake for 12-15 minutes. Remove from oven and turn over. Bake for another 12-15 minutes until chicken is no longer pink.
