Scrumptious Sunday: Not So Thin Mint Brownies

One (and really the only) reason I love this time of year is because of those super addicting and delicious Thin Mints. Unfortunately, time got away from me this year and I didn’t have a chance to order any. What’s a girl to do, right?! I really had a hankering for them a few weeks ago and my boys were asking for tootsie roll brownies so I decided to combine my craving with theirs and boy am I glad I did! These brownies are the perfect mix of fudge-y ooey gooey goodness and refreshing mint. As an added bonus: it made my house smell delicious! So if you are having a craving for Thin Mints give these brownies a try; you won’t regret it!

Ingredients:

BROWNIES:

1 cup butter, melted

2 cups flour

2 cups sugar

1/2 cup cocoa powder

4 eggs

3 tsp vanilla

1 tsp peppermint extract

FROSTING:

1 cup milk chocolate chips

1/2 cup butter

1/2 tsp peppermint extract

Directions:

Preheat oven to 350F.

Combine butter and cocoa powder.

Add in flour and sugar and mix until just combined.

Mix in eggs, vanilla and peppermint (In this order: 1 egg, 1 tsp vanilla, 1 egg, 1 tsp peppermint, 1 egg, 1 tsp vanilla, 1 egg, 1 tsp vanilla)

Pour batter into a greased 9×13 pan and bake for 27-35 minutes or until a toothpick comes out clean.

Let cool on cooling rack for 15 minutes.

To make frosting:

Melt butter and chocolate chips over medium-low heat; stirring constantly. 

When smooth, remove from heat and stir in peppermint. 

Pour frosting over brownies and let cool on cooling rack for 15 more minutes.

Place pan in fridge and allow to set up for 2-4 hours.

Notes:

The frosting will be runny and that’s ok you want it to soak in to the brownies and add more of the mint flavor.

Add the frosting to the brownies while they are still warm so that it does have a chance to soak into the brownies.

Now as you can tell by the name (and the three sticks of butter used) this isn’t a skinny recipe so try to have a little self control and not eat the whole pan.
